Can You Knitch?



To be honest, I've never heard of Knitch before my husband mentioned a craving for it last night. A quick search online showed a fairly easy recipe. Since I had potatoes that have been sitting around for a little too long (think potatoes growing on potatoes).

Ingredients
- 6 medium potatoes, peeled, boiled and mashed
- 1/4 c oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp baking powder
- 1/2 c cold water
- 3 c flour
- 1 medium onion, peeled, diced and sauteed in a little oil/butter

Method

For the dough:

Mix 1c mashed potatoes, 1/4 c oil, baking powder, salt and pepper. Add 1 c flour, mix well. Add the cold water, mix well. Add the remaining flour and mix well until you get a dough. Allow to rest, covered for 30 min.

For the filling:

Mix the remaining potatoes, onions and salt and pepper to taste. Preheat the oven to 425 F.

Roll the dough out to about 1/8" thick. Full your dough in anyway that suits your fancy. As you can see from my photo, I made a few different kinds but decided to go with the round version.
Brush with egg wash. Bake for 25 min.

Verdict: These were really good. they make great snacks on the go and you can fill them with just about anything: curried potatoes, cheese etc! That might not make them traditional knitches anymore but as long as they're good, who cares? :)
