Kulski Homemade Polish Noodles

OK, so this was one of those dishes that came from really not having much to cook with..I had butter, eggs from our chickens (as usual), my bulk flour, rice, some dried Chinese noodles, venison in the freezer and half a head of cabbage from a Saint Patrick's Day sale that was rapidly drying in my crisper.
I had to use up that cabbage and some of my eggs so I found this recipe.

I skipped the part about having to dry the noodles and just threw them fresh into boiling water (they cook quickly). DELICIOUS even on their own!

However, I needed to use up that cabbage so I turned it into Polish cabbage noodles.

Ingredients

Kulski or Wide Egg Noodles, cooked
Cabbage, shredded
2-4 Tbsp Butter
Salt and pepper to taste
Bacon or Polish sausage (optional but I think they would have made the noodles even more yummy)

Method

Salt the shredded cabbage and allow to stand for 15-30 min. This will draw out the moisture and the bitterness in the cabbage. Wring the cabbage of as much liquid as you can. Discard the liquid.

 In a pan, melt some butter over medium heat. If you have bacon or sausage, you can use less butter as the grease will come out from the meat. If you're using meat, add the meat and cook until slightly browned.

Add the cabbage and saute until it's slightly translucent. Add noodles and mix everything well in the oil.

Deer Lung Rempah

This recipe continues my posts on using as much of the deer we caught for food. I've looked all over for deer lung recipes but came up with nothing. You can of course, just grind it up with other meats into a burger or lunch meat or scrapple of some sort. But I decided that I wanted to try it on its on. So, I went back to my roots - Malay style beef lungs. If you want the original recipe for Paru Goreng, you can follow this link. My recipe is inspired by that but simpler.

I used a basic rempah for the seasoning. Rempah is basically a mix of spices that can be wet or dry. I added blachan, which is a fermented then dried shrimp paste or powder. It may also be called terasi (Indonesia), gapi (Thailand), bagoong (Philippines) and balichǎo (Macao). Thanks for Uncle Phil for the information.You should be able to get this in a well stocked Asian grocer.

The lungs turned out to be very good. Not at all game-y, and is similar to the deer heart.

Ingredients:

Deer or beef lungs (approx 2 lbs)
1/2 Tbsp blachan
Salt and fish sauce to taste

Rempah
2 sticks of lemon grass
1 piece of galangal about 3ins
2 tsp of balchan
3-4 tsp corainder powder
1 large onion.

Method





In a large enough sauce pan or pot, bring water to a boil. Add the lungs and simmer for a few hours, until soft. When done, cut into slices.

In a processor, course grind the onion. Remove and fry it until translucent. Return to processor and add the other rempah ingredients. Grind to a paste. You can use this base for curry as well by adding curry powder to the mix.

Use about 3-4 Tbsp of the rempah. Fry the rempah and blachan in a pan until fragrant. Add the lung slices. Add salt and fish sauce to taste. Serve on its own or with rice.

Dandelion Fritters

Ingredients

Dandelion flowers and leaves (optional), washed well and shaken dry

1 egg
About equal part milk (approx 1/8 c)
1/8 tsp baking powder
1 Tbsp rice flour (for the crunchiness)
All purpose flour
Salt, garlic powder or a seasoning of your choice, to taste

Oil for frying

Method

Heat oil in a frying pan. Beat eggs and milk until blended. Add rice flour and enough all-purpose flour to make a pancake batter consistency (the batter should run slowing when poured from a spoon). Add seasonings and mix well, Dip the flowers and/or leaves into the batter. Allow the excess to drip off.

When the oil is hot enough (it should bubble when a dry fork is placed in it), drop the battered flowers into the oil and fry until golden brown. Drain and serve hot.

Dandelion Foraging

Spring is here and that means an onslaught of dandelions! They are just starting to bloom so I was eager to try making dandelion fritters.

Some rules of foraging
  • Never trespass someone else's property. Do not harvest anything without the owners permission
  • Make sure the area has not been sprayed with pesticides etc
  • Positive identification is extremely important. Be sure to identify not only the flowers but the leaves - the whole plant before consuming. When in doubt, avoid.
 Dandelions, to me are quite distinctive, both by their characteristic jagged leaves (low growing, do not confuse with thistles with similar jagged leaves but grow 1-3 ft tall). They produce bright yellow flowers about 1/2-1 in across.

At the end of the season, they produce puff balls of seeds about 3" in diameter.
Again, do not confuse these with thistle seed balls that are larger - usually about 5" in diameter.

The flowers, leaves and roots of the dandelion are edible and are chock full of nutrients. The leaves are normally harvested in early spring, before they flower, but are edible throughout the season. They will, however, become more bitter as the plant gets older. 

The roots can be roasted to make a coffee substitute and the flowers are commonly used to make wine and jellies but I decided to start with fritters!

Nogh Hiang


I have been dreaming about this for ages but never got around to it because it not only takes a while to make, it took me sometime to find the correct bean curd skin for the wrapping. Nogh Hiang is a uniquely Hokkien or Teochew dish served in South-East Asia.

"Nogh Hiang" means "five fragrances" in Teochew. Basically, the roll is season with 5-spices. It is like  spring roll except it's rolled in a bean curd skin instead of a wheat-based skin. The roll is filled with seasoned minced pork and shrimp (optional) then deep fried.

It's usually served with sliced cucumbers and "lap cheung" (Chinese sausage). Use Kecap Manis as a condiment. I just served mine on its own with kecap manis over rice. I personally like ABC brand from Indonesia the best. While you can buy it from Amazon in a pinch, it will be a lot cheaper to purchase it from your local Asian grocer.

Bean curd skin is made by fishing out the skin that forms on the surface of soy milk. It is then dried. You could be able get the bean curd skin from the frozen aisle at the Asian grocer as well. There is a dried version that is not refrigerated. This is not suitable for this recipe.

Ingredients

Filling
2 lbs pork
1 medium jicama, peeled, diced and steamed
1 large carrot, peeled and shredded
1/2 lb raw shrimp, peeled and deveined (optional)
2 tsp salt
2 Tbsp amino acids or soy sauce
1 Tbsp five spice powder
1 Tbsp Shaoxing wine or dry sherry
1 tsp white pepper (optional)
1 egg
1 Tbsp corn starch

Wrapper
Frozen bean curd skin
1 egg, beaten

Method

Get a steamer going. Meanwhile, in a food processor, pulse the pork into a very course mince. Add jicama can pulse until you get a course mince. Add all other filling ingredients and pulse until you get a well mixed fine mince.

On a flat surface, lay out 1 bean curd skin. Form a meat roll and place it on an edge of the skin. Roll the skin and meat towards the opposite edge, folding the bean curd sides in into the package before sealing the final side with the some beaten egg. Repeat. Place the rolls in the steamer and steam until the skin turns translucent.

In a separate pan, heat oil over medium heat. To test if the oil is hot enough, place a dry fork in it. If the oil produces bubbles, the oil is hot enough. Place the steamed rolls one by one into the oil, making sure they do not touch each other. Fry each side until golden brown. Drain and serve.

Hemp Seed Pancakes


I bought a pack of Hemp seeds from Costco the other day and was eager to try it in a recipe. They were good sprinkled on a parfait-like fruit cup. They were also very good in this modified pancake recipe. You can choose to omit the seeds if you can't get it but it was really good in it!

Ingredients


1 cup hemp seeds
1 cup flour
3 Tbsp butter
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
4 eggs
1 cup plain yogurt (or milk)
1 cup water
2 tablespoons vanilla


Directions
Add all wet the ingredients in a blender. Pulse to mix. Add the dry ingredients and pulse until you get a smooth consistency. Cook on (buttered) pan / griddle (medium heat). Cook until tops are bubbly – turn and cook until browned.

Serve hot with maple syrup and jam!

Preparing For Your Chicks


Spring is here and that means it's chick season once again! Whether you're buying them locally or having them shipped to you, you'll need to prepare for their arrival.

Equipment needed:
Heat lamps
Litter and/or shavings (use wood shavings, not shredded paper)
Feeders
Waterers
Chick feed
Clean water
Sanitizing solution
Cleaning brushes
Q-tips

A warm place indoors for the chicks, away from adult chickens, if any. For housing, we've always used large plastic totes with wheels. You can get these for less than $15 at Walmart or Home Depot.

Feeders, waterers, litter and feed can be purchased from your local feed or ranch supply store. If you're buying Purina feed, be sure to sign up for their Purina Difference Rewards Program - they email you coupons every quarter. 

I'd advise buying litter from the feed supply store rather than a pet store which is a lot more expensive. Remember to only use wood shavings for chicks. Do not use paper sheds as the chicks may get their legs entangled and/or broken from the paper sheds.

Clean and disinfect the chick area a few days before the chicks arrive to allow to area to dry. Place the heat lamp about 20" above the chicks.

Make sure the brooder is warm before they arrive (approx 90F). If the chicks are huddled under the lamp, the area is too cold. If you find the chicks moving too far away from the lamp, the area is too warm. Overheating the chicks can be as dangerous as having them too cold. If the chicks move comfortably around the area then you have the temperature right.

Water and feed should be cleaned and replenished daily. Wet or soiled litter should be removed and replaced with dry clean litter.

It is also important to note that chicks are susceptible to a condition call "pasting up" - this is when the feces builds up on the chick butt, preventing additional excrement from releasing. Check chicks daily and remove the dried waste with a warm damp paper towel or Q-tips, which I've found to be quite handy!
