Banana Bread

This yields a nice moist banana bread, even with the use of flax meal.

Ingredients

8 Tbsp butter (room temp)
3/4 c organic sugar
2 eggs
1 3/4 c organic all purpose flour*
1/4 c flax meal*
1 tsp baking soda
1/2 tsp salt
3 large ripe bananas (peeled and mashed)
1 tsp vanilla
1/2 c walnuts, shelled and chopped coarsely (optional)

* Flour and flax may be substituted for 1c each of all purpose flour and whole wheat flour.

Method

Preheat the oven to 350F. Grease a 9x5x3 bread pan or use a similar-sized silicone pan. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Shift flour, baking soda and salt together. Stir in flax meal (or whole wheat flour) and add to the creamed mixture. Fold in bananas, vanilla and walnuts (optional).

Pour into prepared bread pan and bake for 50-60 min or until done. To test, insert a dry clean knife or toothpick into the center. If it comes out clean, the bread is done. Cool in pan for 10 min on a rack.
