I made this using leftovers of cream ham and quinoa. Since it wasn't quite enough for another meal, I bulked it up with some rice and frozen vegetables and added a little cheese to make a casserole. The mix of rice and quinoa gave the dish a very nice texture. It's a very versatile recipe so just add what you have on hand!
Ingredients
1c creamed ham (omit or use whatever you have on hand)
2 c cooked quinoa
1 c uncooked rice, rinsed under cold water until water runs clear
1-2 c milk
1/2 c heavy cream (optional)
2 Tbsp butter
2 Tbsp flour
2 c frozen vegetables
1 c shredded Cheddar cheese
1/2 onion peeled and diced
Salt & pepper to taste
Method
Preheat the over to 350F. In an oven-safe pan, melt butter. Add onions and cook until soft. Mix in flour to form a roux. Slowly add milk and mix until thickened. Add everything else except the cheese and mix together. Top with cheese. Bake for about 30 min or until rice is cooked.
